The Sous Chef will be an integral part of the management team at this exciting time. Duties:Leads kitchen team in head chef's absenceProvides guidance to junior kitchen staff members, including, but not limited, to line cooking, food preparation, and dish platingOversees and organizes kitchen stock and ingredientsHACCP trainedKnowledge and interest in Irish food culture and current trends.Ability to work on own initiative and take control of situations as they ariseEnsures a first-in, first-out food rotation system and verifies all food products are properly dated and organized for quality assuranceKeeps cooking stations stocked, especially before and during prime operation hoursHires and trains new kitchen employees to restaurant and kitchen standardsManages food and product ordering by keeping detailed records and minimises waste, plus works with existing systems to improve waste reduction and manage budgetary concernsSupervises all food preparation and presentation to ensure quality and restaurant standardsWorks with head chef to maintain kitchen organization, staff ability, and training opportunitiesVerifies that food storage units all meet standards and are consistently well-managedAssists head chef with menu creationCoordinates with restaurant management team on supply ordering, budget, and kitchen efficiency and staffingSkills and Qualifications:HACCP trainedFormal Culinary TrainingPrevious Restaurant and Hotel Restaurant Experience is EssentialExtensive Food and Beverage Knowledge, Restaurant Industry Knowledge,Strong Organizational SkillsAttention to DetailKnowledge of Restaurant RegulationsLeadership, ManagementPositivityAbility to Work Under PressureSelf-MotivatedCreative Problem-Solving SkillsStrong Verbal and Written Communication SkillsExceptional Customer-Service SkillsBenefitsFree onsite ParkingSubsidised LunchesDiscounted rates at Comer Group Ireland HotelsDiscounted rates at Comer Group Ireland Spa & Leisure FacilitiesDiscounted rates at Comer Group Ireland RestaurantsDue to the large volume of applications for this role, only successful candidates will be contacted.
