An attractive renumeration package is available for the ideal candidate. The successful applicant will be required to assistant and support the Executive Head Chef in all areas of the department.The ideal candidate should be a hands-on proactive manager capable of leading and motivating a team of Chefs to excel and exceed in the delivery of exceptional food whilst maintaining consistency. You will be an ambitious person responsible for creating an environment that promotes employee morale and encourages the team to have pride and commitment in their work.What’s in it for you? ·        Chef Health Insurance Scheme·        Income Protection Scheme·        Company Funded Educational Programs·        Wellness Program·        Discount on Dining options of up to 50%·        Reduction on accommodation for family and friends·        Discount for Spa treatments and products·        Use of Health Clubs and swimming pool·        Service Awards·        Bike to work scheme·        Staff Dining Facilities·        Staff ParkingWhat we are looking for:·        Previous experience as an Executive Sous Chef or Department Head·        Culinary certificate or degree·        HACCP level 3 or higher·        Through knowledge of menu planning, food presentation, restaurant and large banqueting and event operations·        Thorough knowledge of payroll management, roster planning, Time sheets, budgets including forecasting, and G.P. controls·        Assist with training and mentoring of chef team to ensure individual professional development and succession planning·        Excellent communication skills·        A hands-on proactive manager capable of leading and motivating a team of chefs·        Through knowledge of food safety, sanitation, storage and kitchen maintenanceResponsibilities·        Assist with the day to day running of all outlets by careful management of section workloads·        Assist with ensuring optimum stocking levels and ordering is conducted to achieve food G.Ps  and KPI's·        Assist with controlling the elements that determine profit and loss·        To maintain all kitchen Outlets, still rooms, storage rooms, delivery areas and staff dining rooms in line with HACCP and legislative standards·        Execute the Culinary Strategy of the Executive Head Chef to meet the business and operational standard·         Deputise in the absence of the Executive Head Chef·         Designing and planning of menus based on seasonal products ·        Assist with staff recruitment, onboarding, and integration by analysing candidates’ skills and competencies·        Identify any potential candidates for promotion within the brigade·        Maintain effective and positive feedback to all colleagues·        Ensure the quality and consistency of 5-star food standards across all outlets in order to exceed guest expectations  If you are seeking a rewarding career that involves first rate training and education, mentoring and development, attractive compensation, and inspiring rewards and recognition, consider joining The Fota Collection
