Sous Chef – Central Bakery & KitchenBray, Co WicklowJob Specification We are seeking an experienced Pastry/ Bakery Sous Chef to join our Central Bakery & Kitchen team to prepare food, dishes, and recipes in line with Avoca standards and quality. This is a full-time permanent position working Monday to Friday on 12pm to 9pm shift.This position is ideal for anyone who is seeking to advance their culinary career. You will be working with fresh food produce and artisan ingredients. Our chefs are hardworking and creative, and we are very team focused. It is a busy kitchen and there will be high volume orders during seasonal periods, but it is an exciting time of development for us. You will be working closely with the Head Pastry Chef and Executive Pastry Chef to develop and grow the business.Key Responsibilities: · Supporting the Head Chef in delivering consistently high-quality food to Avoca customers.· Keeping up to date with new products, recipes, preparation techniques and HACCP requirements.· Responsible for all health and safety standards and food management systems (HACCP) when the Head Chef is absent. Includes knowledge of all procedures and policies pertaining to food preparation, allergens, receiving products, storage, and sanitation.· Responsible for management of all team members in the kitchen. This involves a level of personnel administration, supervision of junior chefs, timekeeping, holiday requests, working time legislation requirements and performance management.· Ensuring stock is properly rotated, products are ordered in time from our various suppliers, with attention paid to stock levels.· Responsible for kitchen roster, including staff levels.Key Requirements: · A minimum of 5 years of experience· Ability to lead a team during busy periods as the senior chef in the Pastry/kitchen.· Bring creativity with your input into menu design.· A full knowledge of HACCP and its implementation· Be detail oriented especially in relation to health and safety rules· Be energetic and have a friendly disposition, strong interpersonal skills, a good team player.· Be reliable and trustworthy.Why work with us?We're always on the lookout for like-minded folks to join our merry band of men and women.
